Creamy Pasta with Peppers and Chicken

Prepare this delicious, easy, and tasty Lucchetti® Vegetable Spaghetti with grilled chicken and paprika in a creamy roasted pepper sauce, with Parmesan cheese and a touch of fresh parsley. You will love it!

  • 2 liters water
  • 1 package Lucchetti® vegetable spaghetti
  • 1 tablespoon olive oil
  • 3 leaves dried bay
  • 2 tablespoons salt
  • 2 red bell peppers
  • 2 chicken breasts
  • 1 pinch salt and pepper
  • 1 tablespoon paprika
  • 1 cup sour cream
  • 2 tablespoons butter
  • 1 tablespoon garlic, finely chopped
  • 1 red bell pepper, cut into medium cubes
  • 1 cup Parmesan cheese
  • 1 pinch parsley, finely chopped
  • cherry tomato, for garnish

  • Heat water in a small pot over high heat until it reaches boiling point, cook the Lucchetti® Vegetable Spaghetti with olive oil, bay leaves, and salt until al dente.
  • Heat a grill over high heat and cook the peppers along with the chicken breast, season with salt, pepper, and paprika to taste. Cut the breast and set aside. Sweat the peppers, clean them and set aside.
  • Blend the peppers with the cream. Set aside.
  • Heat a pan over medium heat with the butter, cook the garlic with the onion and pepper, add the sauce, cook and season to taste. Add the Parmesan cheese and pasta, mix until well combined.
  • Serve the pasta with pieces of chicken and fresh parsley. Garnish with cherry tomatoes.
