Pasta with Broccoli and Chicken

A delicious recipe that includes four food groups in your diet: protein, vegetables, dairy, and carbohydrates. Ideal for increasing your calcium intake during lactation.

  • 2 cups chicken broth
  • 2 chickens, breast
  • 1/4 cups olive oil
  • 1 broccoli, chopped
  • 500 grams fusilli pasta
  • 2 cloves garlic
  • 1/2 cups Parmesan cheese, grated
  • salt, to taste
  • 1 red bell pepper

  • In a pot, bring the chicken broth to a boil and add the breasts. Cook for 10 minutes or until well cooked. Remove from heat and slice.
  • Bring water to a boil in a large pot with sea salt. Add the broccoli and cook until tender, approximately 3 minutes.
  • Mix the chicken with 2 tablespoons of olive oil and salt.
  • Remove the broccoli and drain. Add the pasta to the boiling water. Let it boil until al dente and drain.
  • In a large skillet, heat the remaining olive oil and sauté the garlic and broccoli for 2 minutes.
  • Add the chicken and pasta, mix, and let cook for 1 more minute. Slice the red bell pepper into thin strips and incorporate it.
  • Remove the garlic clove and add the Parmesan cheese. Mix and serve.
