1 tablespoon garlic, finely chopped, for the vinaigrette

2 pumpkins, in half moons
1 chicken breast, cut into strips or cubes
2 tablespoons butter, for the sauce
1/2 cups onion, finely chopped, for the sauce

1/2 cups Parmesan cheese, for the sauce

For the vinaigrette: Mix the garlic, yellow lemon juice, parsley, chili flakes, salt, and pepper in a bowl, then whisk with a balloon whisk and add the olive oil in a thin stream while continuing to mix, until the ingredients are perfectly combined.
Marinate the chicken and pumpkins with the vinaigrette, in separate containers, for 10 minutes and set aside.
Cook the chicken in a skillet over medium heat, then add the pumpkin and cook for 5 minutes over medium heat until both are perfectly cooked. Set aside.
Heat enough water in a pot until it boils, then add salt, wait for it to boil again, and add La Moderna® Rotini pasta and cook for 10 minutes.
For the sauce: melt the butter in a skillet over low heat and warm the heavy cream, parmesan cheese, salt, and pepper there. Wait for the cheese to melt and then add the pasta you cooked; mix for a couple of minutes until the sauce is well integrated with La Moderna® Rotini pasta, then add the chicken and pumpkins. Mix until combined and remove from heat.
Serve La Moderna® Rotini pasta and garnish with basil and parmesan cheese.
