Ingredients: 1 bag La Moderna® rotini pasta, 450 grams; water, for cooking the pasta; salt, for cooking the pasta; 1/2 cups olive oil, for the vinaigrette; 1 tablespoon garlic, finely chopped, for the vinaigrette; 2 tablespoons lemon juice, for the vinaigrette; 2 tablespoons parsley, finely chopped, for the vinaigrette; 1 teaspoon chile flakes, for the vinaigrette; salt, for the vinaigrette; pepper, for the vinaigrette; 2 pumpkins, in half moons; 1 chicken breast, cut into strips or cubes; 2 tablespoons butter, for the sauce; 1/2 cups onion, finely chopped, for the sauce; 1 teaspoon garlic, finely chopped, for the sauce; 1 1/2 cups whipping cream, for the sauce; 1/2 cups Parmesan cheese, for the sauce; salt, for the sauce; pepper, for the sauce; basil, chopped, for garnish; Parmesan cheese

For the vinaigrette: Mix the garlic, yellow lemon juice, parsley, chili flakes, salt, and pepper in a bowl, then whisk with a balloon whisk and add the olive oil in a thin stream while continuing to mix, until the ingredients are perfectly combined. Marinate the chicken and pumpkins with the vinaigrette, in separate containers, for 10 minutes and set aside.
