Pasta with Pomodoro Sauce and Bacon

Pomodoro sauce is a classic tomato sauce for pasta in Italy and is made from various tomatoes. Since tomatoes provide a degree of acidity, sweetness, and different flavors, they pair well with any type of pasta and are usually accompanied by parmesan cheese.   • 1 package La Moderna® screw, 200 g
  • 1 1/2 cups bacon, thick cut, in medium cubes
  • 1 1/2 cups cherry tomato, 1 Picadilly tomato, halved
  • 1 cup pear tomato, 1 datterino tomato, halved
  • 1 cup red beefsteak tomato, 1 cherry tomato, halved
  • 1 cup Roma tomato, 1 can San Marzano tomatoes, halved
  • 1 1/2 cups onion, chopped into medium pieces
  • 1 stalk celery, in pieces
  • 1/2 cups fresh basil leaf
  • salt
  • 1/2 cups extra virgin olive oil
  • 1/4 cups basil
  • Parmesan cheese, sliced, for garnish

  • For the pasta: Heat a pot of water and wait until it boils. Once boiling, add enough salt and wait for it to boil again, then pour in the package of Tornillo La Moderna® and cook for 10 minutes; the pasta should be al dente. Set aside.
  • Cook the tomatoes, onion, celery, and basil in a pot over medium heat for 20 minutes. Set the tomato sauce aside and let it cool.
  • Blend the pomodoro sauce for 5 minutes until you achieve a smooth consistency.
  • Heat a skillet over medium heat and fry the bacon for 5 minutes until golden, then add the Tornillo La Moderna® and the sauce to finish integrating the flavors. Cook for 2 more minutes and remove from heat.
  • Serve the pasta with pomodoro sauce along with the bacon, garnish with parmesan cheese and fresh basil.
