Spaghetti Ratatouille

  • salt, for the pasta
  • 1 package Spaghetti no. 5 From Luigi®
  • 2 tablespoons vegetable oil
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups pumpkin, in medium cubes
  • 1/2 cups eggplant, in medium cubes
  • 1 cup cherry tomato, in medium cubes
  • herbes de Provence
  • salt
  • pepper
  • Parmesan cheese, in slices, for decoration
  • basil, finely chopped, for decoration

  • Heat the water in a pot over medium heat and once it boils, season with salt and add the Spaghetti no. 5 De Luigi®. Cook for 9 minutes or until the pasta is al dente. Drain and set aside.
  • Heat the oil in a pan over medium heat, add the onion and garlic and cook until transparent. Add the bell pepper, zucchini, eggplant, and tomatoes, cook for 5 minutes. Season with salt, pepper, and herbes de Provence, and cook for 3 more minutes.
  • In a bowl, place the Spaghetti no. 5 De Luigi® and add olive oil and salt.
  • Serve the pasta on a platter, top with the ratatouille and garnish with
