Heat the water in a pot over medium heat and once it boils, season with salt and add the Spaghetti no. 5 De Luigi®. Cook for 9 minutes or until the pasta is al dente. Drain and set aside. Heat the oil in a pan over medium heat, add the onion and garlic and cook until transparent. Add the bell pepper, zucchini, eggplant, and tomatoes, cook for 5 minutes. Season with salt, pepper, and herbes de Provence, and cook for 3 more minutes.
