Caesar Salad with Shrimp

  • 8 cups Romaine lettuce
  • 2 cups shrimp, cooked 
  • 2 tablespoons Parmesan cheese, shredded 
  • 2 tablespoons walnuts
  • 2 teaspoons olive oil
  • pinches salt
  • pinches pepper
  • 2/3 cups whole-wheat pasta, penne
  • 4 tablespoons Caesar dressing, low-fat

  • On a baking sheet, place walnuts and bake for 10 minutes at 356º F. Let cool and set aside.
  • In a small pot over low heat, bring water to a boil. Add pasta and cook for 10 minutes or until al dente. Drain and set aside.
  • In a bowl, add shredded lettuce, pasta, shrimp, olive oil, and toasted walnuts. Mix with a spoon.
  • Serve Caesar salad with shrimp garnished with Caesar dressing and sprinkled with Parmesan cheese.
