Breaded Chicken Salad

  • 1 tablespoon Knorr® granulated chicken bouillon
  • 2 cups lettuce, chopped
  • 1 cup cherry tomato, cut in half
  • 1 cup cucumber, sliced
  • 1 chicken breast, flattened and cut into strips
  • 1 egg, lightly beaten
  • 2 cups breadcrumbs
  • 1/2 cups olive oil
  • 4 tablespoons vinegar
  • 2 tablespoons lime juice
  • 1 tablespoon fresh cilantro
  • 1 clove garlic, finely chopped
  • pepper, to taste
  • vegetable oil, for frying

  • Clean the chicken breast very well, dry it, and cut it into strips.
  • In a deep bowl, mix the breadcrumbs with one tablespoon of Knorr® Chicken Broth.
  • Dip each strip of chicken in the beaten egg and then in the breadcrumb mixture.
  • Cook in a hot skillet with a little oil until golden brown.
  • On a platter, place the lettuce, tomatoes, cucumbers, and top with the breaded chicken strips.
  • To make the vinaigrette, mix the vinegar, olive oil, lemon juice, cilantro, garlic, and pepper to taste. Mix with a fork until you have a homogeneous mixture.
  • Add the vinaigrette on top of the salad.
