Couscous salad

From the Mediterranean we give you this couscous salad recipe, it can be an alternative to the rice of your meals.

  • 1 box couscous, (if there is a better parmesan flavor)
  • 1 red bell pepper, chopped
  • 1/2 red onions, chopped
  • 1 cucumber, peeled, seeded and chopped
  • 1 tomato, chopped and seedless
  • 1/4 cups fresh parsley, chopped
  • 1/2 cups feta cheese, fallen apart
  • 1/4 cups olive oil
  • 3 limes, its juice
  • pepper, to taste

  • Make the couscous according to the instructions in the box.
  • In a large bowl, mix the couscous with the pepper, onion, cucumber, tomato, parsley and feta.
  • In a small deep bowl, make the vinaigrette combining olive oil with lemon juice, salt and pepper.
  • Mix the couscous with the vinaigrette and serve.
