Easy corn chicken salad

  • 1 chicken breast, skinless and boneless, in cubes
  • 2 eggs
  • 2 cups panko
  • vegetable oil, for frying
  • 1 bag Eva® Mexican Salad
  • 1 cup strawberries, sliced
  • 1/2 cups yellow corn kernels
  • 1/2 baby cucumbers, sliced
  • 1/2 cups coconut flake
  • mustard dressing

  • Dip the chicken cubes in the egg, drain to remove excess, coat with panko, and press. Set aside.
  • Heat the oil in a pot over medium heat and fry the chicken for 5 minutes or until well cooked and crispy. Place on paper towels to remove excess oil.
  • In a bowl, place a bed of Ensalada Mexicana Eva®, strawberries, yellow corn kernels, cucumber, coconut flakes, and fried chicken. Serve the chicken salad with honey mustard dressing!
