Take the salmon, remove its skin and finely chop it with a sharp knife.
Peel the avocados and finely chop them. Carefully mix with 2 tablespoons of lemon juice to prevent browning.
In a deep bowl, mix the olive oil, lemon juice, balsamic vinegar, salt, and pepper.
Chop the scallions.
In a bowl, mix the salmon with half of the vinaigrette and half of the scallions.
In another bowl, mix the avocado with the other half of the vinaigrette and the other half of the scallions.
Assemble each tartare using a cookie cutter. Place the cutter on a plate, fill half with the avocado tartare and then add a layer of the salmon tartare on top of that half.
Carefully remove the cookie cutter and your tartare will be ready; repeat for the other 3 portions.
