Salmon and Avocado Tartare

A recipe for fresh chopped salmon with avocado and a lemon dressing.

  • 500 grams fresh salmon
  • 3 avocados, semi ripe
  • 1/4 cups olive oil
  • 5 tablespoons lime juice
  • 2 tablespoons balsamic vinegar
  • 4 teaspoons salmon roe
  • 1 pinch pepper
  • 2 bunches chives

  • Take the salmon, remove its skin and finely chop it with a sharp knife.
  • Peel the avocados and finely chop them. Carefully mix with 2 tablespoons of lemon juice to prevent browning.
  • In a deep bowl, mix the olive oil, lemon juice, balsamic vinegar, salt, and pepper.
  • Chop the scallions.
  • In a bowl, mix the salmon with half of the vinaigrette and half of the scallions.
  • In another bowl, mix the avocado with the other half of the vinaigrette and the other half of the scallions.
  • Assemble each tartare using a cookie cutter. Place the cutter on a plate, fill half with the avocado tartare and then add a layer of the salmon tartare on top of that half.
  • Carefully remove the cookie cutter and your tartare will be ready; repeat for the other 3 portions.
