Tabbouleh with Salmon

  • 1 cup couscous
  • 1/4 teaspoons salt
  • 2 cans salmon, in water
  • 1 cup cherry tomato, halved
  • 1 cup bell pepper, diced
  • 1 cup cucumber, sliced into half-moons
  • 1 cup fresh parsley, finely chopped
  • 2 limes, its juice
  • 1/4 cups olive oil

  • Cook the couscous according to the package instructions and add 1/4 teaspoon of salt.
  • Mix all the vegetables, the drained salmon, and the couscous in a bowl.
  • Add the olive oil, lemon juice, and salt; adjust the seasoning. Refrigerate for 30 minutes to 1 hour.
