2 cans salmon, in water
1 cup cherry tomato, halved
1 cup bell pepper, diced
1 cup cucumber, sliced into half-moons
1 cup fresh parsley, finely chopped
2 limes, its juice
1/4 cups olive oil

Cook the couscous according to the package instructions and add 1/4 teaspoon of salt.
Mix all the vegetables, the drained salmon, and the couscous in a bowl.
Add the olive oil, lemon juice, and salt; adjust the seasoning. Refrigerate for 30 minutes to 1 hour.
