1 cup asparagus, bleached
2 pears, green in segments
2 green apples, in segments
2 green apples, in round cut
4 stems celery
balsamic vinegar
white vinegar
4 guajillo chiles, roasted
coarse salt
black pepper
1/2 cups fresh cilantro
1 árbol chile, roast
2 tablespoons canola oil
3 morita chiles, roasted
black pepper powder
table salt
1 cup spinach
1 cucumber, without seeds in julienne
4 lettuce, hearts

Mix all salad ingredients (cucumbers, lettuce hearts, spinach, salt and pepper) in a bowl and reserve in the refrigerator.
Grill the chiles until they are well browned in a mortar, or grind them with the grain salt and the fat pepper.
Go adding the olive oil little by little.
Then add the vinegar and the coriander leaves.

Season the pears, apples and asparagus with salt, pepper and bathe well in the vinaigrette.
Put it on the grill.
Mount the salad with pears and apples.
Garnish with the chili vinaigrette.
