Grilled Apple and Pear Salad

  • 1 cup asparagus, blanched
  • 2 pears, green in wedges
  • 2 green apples, in wedges
  • 2 green apples, cut into rounds
  • 4 stems celery
  • balsamic vinegar
  • white vinegar
  • 4 guajillo chiles, roasted
  • coarse salt
  • black pepper
  • 1/2 cups fresh cilantro
  • 1 árbol chile, roasted
  • 2 tablespoons canola oil
  • 3 morita chiles, roasted
  • black pepper powder
  • table salt
  • 1 cup spinach
  • 1 cucumber, seedless julienne
  • 4 lettuce, hearts

  • Mix all the salad ingredients (cucumbers, lettuce hearts, spinach, salt, and pepper) in a bowl and set aside in the refrigerator.
  • Roast the chiles until well browned in a mortar, or crush them with coarse salt and black pepper.
  • Gradually add the olive oil.
  • Then add the vinegar and cilantro leaves.
  • Blend.
  • Season the pears, apples, and asparagus with salt, pepper, and coat well in the vinaigrette.
  • Place it on the grill.
  • Plate the salad with the pears and apples.
  • Dress with the chili vinaigrette.
