Ingredients

1 serving
  • 1 Cup of asparagus bleached
  • 2 pears green in segments
  • 2 green apples in segments
  • 2 green apples in round cut
  • 4 stems of celery
  • to taste of balsamic vinegar
  • to taste of White vinegar
  • 4 guajillos chilei peppers roasted
  • to taste of sea salt
  • to taste of black pepper
  • 1/2 of Cup of coriander leaf
  • 1 Chile de árbol pepper roast
  • 2 spoonfuls of canola oil
  • 3 morita chili peppers roasted
  • to taste of ground pepper
  • to taste of table salt
  • 1 Cup of spinach
  • 1 cucumber without seeds in julienne
  • 4 lettuce hearts

    Preparation

    Mix all salad ingredients (cucumbers, lettuce hearts, spinach, salt and pepper) in a bowl and reserve in the refrigerator.
    Grill the chiles until they are well browned in a mortar, or grind them with the grain salt and the fat pepper.
    Go adding the olive oil little by little.
    Then add the vinegar and the coriander leaves.

    Season the pears, apples and asparagus with salt, pepper and bathe well in the vinaigrette.
    Put it on the grill.
    Mount the salad with pears and apples.
    Garnish with the chili vinaigrette.
