Light Nopal Salad

This recipe is a delicious light nopal salad that, besides being totally dietetic and healthy, also has a delicious flavor. Prepare it for a busy moment when you don't want to grab a bread and would rather keep your figure.

  • 1/4 cups lime juice

  • 2 cups red beefsteak tomato, in cubes
  • 1/2 cups red onion, finely chopped
  • 1 1/2 cups nopal, previously cooked
  • black pepper
  • 2 avocados, slices
  • 250 grams queso fresco, in cubes
  • 5 leaves lettuce
  • alfalfa

  • For the vinaigrette: mix the oil with the lime juice, olive oil, salt, and pepper.
  • In a bowl, add the onion, tomato, and nopal, incorporate the vinaigrette, and mix. Let it marinate for two hours.
  • Serve on lettuce leaves and alfalfa.
  • Garnish with cubes of fresh cheese and avocado slices. Enjoy.
