Cook the couscous package as instructed on the package.
Remove the core from the tomatoes and scoop out all the pulp inside, being careful not to break them. Let the tomatoes dry and sprinkle a little salt on them. Remove all the leftover pulp pieces and chop them into small pieces. Leave out all the seeds and water from the tomatoes.
Dice the cucumber, feta cheese, and cooked zucchini. Slice the black olives. Chop the mint and basil. Mix everything in a bowl.
Add the couscous to the mixture along with a drizzle of olive oil, pepper, and salt if desired. Mix all the ingredients and taste to season.
Fill the tomatoes with the mixture.
