Mediterranean Salad in Tomatoes

A delicious and simple salad recipe with all the Mediterranean flavor as it includes black olives, feta cheese, and couscous.

  • 10 red beefsteak tomatoes, washed
  • 1 package couscous
  • 1 package feta cheese
  • 1 can black olives
  • 1 cucumber
  • 1 zucchini, cooked
  • peppermint
  • basil
  • olive oil
  • salt

  • Cook the couscous package as instructed on the package.
  • Remove the core from the tomatoes and scoop out all the pulp inside, being careful not to break them. Let the tomatoes dry and sprinkle a little salt on them. Remove all the leftover pulp pieces and chop them into small pieces. Leave out all the seeds and water from the tomatoes.
  • Dice the cucumber, feta cheese, and cooked zucchini. Slice the black olives. Chop the mint and basil. Mix everything in a bowl.
  • Add the couscous to the mixture along with a drizzle of olive oil, pepper, and salt if desired. Mix all the ingredients and taste to season.
  • Fill the tomatoes with the mixture.
