This little cucumber and lasagna roll will be a delight for your family, as the combination of its flavors makes it fresh and very original. It’s a very colorful and easy salad to make.
4 sheets lasagna pasta, e Luigi Speciale La Moderna®
2 cups water, ice water (to stop the cooking)
olive oil
150 grams cream cheese, at room temperature
1 tomato
1 tablespoon red onion
3 tablespoons pickled chiles
1 carrot, medium
1/2 tablespoons lime juice
salt
1 cucumber, large
5 leaves romaine lettuce

To cook the lasagna, place 1.5 liters of water and 1/4 tablespoon of salt in a pot or pan, and put it on the stove over high heat.
When the water is boiling vigorously, place the 4 sheets of pasta in, one over the other; the quality of Luigi Speciale La Moderna Lasagna ensures that the sheets do not stick during cooking, which will take about 10-12 minutes to reach al dente. Do not move the sheets of pasta during cooking to avoid breaking them.
After the cooking time, turn off the heat and carefully place each sheet of Luigi Speciale La Moderna Lasagna into the container with ice water; this is to stop the cooking of the pasta once it has come to a boil.
Next, take each sheet out of the ice water and dry it on a flat plate using paper towels, drizzle a few drops of olive oil on each side of the sheet to prevent them from drying out, and set aside in a cool place.
Wash and disinfect the vegetables; set aside.
Dice the tomatoes, red onion, and pickled chiles into small cubes, and julienne the carrot finely. Reserve some tomato and carrot for decoration.
In a small container, combine cream cheese, tomato, onion, chile, carrot, lemon juice, and salt to taste; mix until you have a homogeneous mixture. Refrigerate until assembly.
Slice the cucumber into thin, long slices, leaving the skin on for a more appetizing look; it’s best to use a vegetable peeler and avoid reaching the seeds.
To assemble each roll, place a slice of cucumber, then a sheet of Luigi Speciale La Moderna Lasagna, a tablespoon of vegetable and cheese filling, and carefully roll it up to avoid spilling the filling. Secure it with a skewer and place it on a leaf of lettuce, decorating with julienne carrots and diced tomatoes.
