Pineapple and Cabbage Salad

  • 1 pineapple
  • 500 grams cabbage, white
  • 1 cup corn
  • 250 grams raisins
  • 5 tablespoons sugar
  • 1 potato, cooked, for the mayonnaise
  • 1 cup low-fat milk, for the mayonnaise
  • 1/4 cups vegetable oil
  • salt, and pepper
  • 1 teaspoon vinegar
  • 1 cup water

  • Previously washed cabbage, finely chop it into julienne strips. Dice the pineapple, removing the core.
  • In a pan, place the water with sugar and the pineapple, cooking until caramelized.
  • To make the vegetarian mayonnaise, place the cooked potato cut into 4 pieces in the blender, add the milk, and start incorporating the oil in a thin stream to avoid cutting it. Add salt, pepper, and a touch of vinegar. The oil is to thicken it a bit.
  • Finally, in a bowl, place all the ingredients, gradually add the mayonnaise, raisins, and corn, mix with a wooden spoon, and refrigerate before serving.
