Potato Salad with Granola

For hot days, serve this delicious potato salad with granola as a side dish. It is the perfect complement for a healthy and balanced meal. It is made with Kellogg’s® Ancient Grains Granola; sunflower seeds, amaranth, and raisins that provide a rich flavor and a pleasant crunchy texture.

  • 1 cup Kellogg’S® granola ancestral grains; sunflower seeds, amaranth and raisins
  • 2 cups new potatoes
  • 4 tablespoons mayonnaise
  • 1 tablespoon parsley, Washed and disinfected
  • 1/4 cups carrot, washed and disinfected
  • 1/4 cups red onion
  • 2 tablespoons vegetable oil
  • 1/2 teaspoons salt
  • 1/2 teaspoons pepper

  • Cut the baby potatoes in half and cook them in boiling salted water. Drain the potatoes and immerse them in ice water to stop the cooking.
  • Slice the red onion and caramelize it in a hot skillet with oil. Peel the carrot and cut it into very thin strips.
  • Cook the carrot with a little oil, salt, and pepper until slightly tender.
  • Mix the potatoes with Kellogg’s® Ancient Grains Granola; sunflower seeds, amaranth, and raisins, the onion, the carrot, mayonnaise, and parsley.
  • Keep in the refrigerator until serving.
