Preparation
Cut the chambray potatoes in half and cook them in boiling salted water. Drain the potatoes and soak them in ice water to slow down cooking.
Fillet the red onion and caramelize it in a hot frying pan with oil. Peel the carrot and cut it into very thin strips.
Cook the carrot with a little oil, salt and pepper until slightly soft.
Toss potatoes with Kellogg's® Ancient Grains Granola; Sunflower seeds, amaranth and raisins, onion, carrot, mayonnaise and parsley.
Keep in the refrigerator until serving time.
