Potato Salad with Mayonnaise and Lemon

A delicious potato salad, classic for the December holidays. The salad contains mayonnaise, lemon, green onions, and other herbs.

  • 1 1/2 kilos new potatoes, or potato
  • 3/4 cups mayonnaise
  • 3 tablespoons rice vinegar
  • 3 tablespoons chives, chopped fresh
  • 1 bunch celery, cut into cubes
  • 1/4 cups fresh parsley, chopped
  • 1/4 cups basil
  • 2 tablespoons lime juice
  • 1 tablespoon lemon zest
  • 1/2 cups radish, cut into julienne
  • salt
  • pepper

  • Bring the potatoes to a boil in a large pot with plenty of water. Once boiling, reduce the heat to low and cook the potatoes for 20 minutes or until done.
  • Remove the potatoes from the water and let them cool (approximately 20 minutes).
  • Cut the potatoes into cubes and place them in a large deep bowl. Season with vinegar, salt, and pepper, and mix.
  • Add the other ingredients and mix the salad. Season once more with salt and pepper and refrigerate.
