Bring the potatoes to a boil in a large pot with plenty of water. Once boiling, reduce the heat to low and cook the potatoes for 20 minutes or until done.
Remove the potatoes from the water and let them cool (approximately 20 minutes).
Cut the potatoes into cubes and place them in a large deep bowl. Season with vinegar, salt, and pepper, and mix.
Add the other ingredients and mix the salad. Season once more with salt and pepper and refrigerate.
