A rich potato salad, classic for the holiday season. The salad has mayonnaise, lemon, chives and other herbs.

Ingredients

4 portions
  • 1 1/2 kilos cambray potato, or dad
  • 3/4 cups mayonnaise
  • 3 tablespoons rice vinegar
  • 3 tablespoons chives, chopped fresh
  • 1 bouquet celery, cut into cubes
  • 1/4 cups fresh parsley, chopped
  • 1/4 cups basil
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cups radish, cut in julienne
  • salt
  • black pepper

Preparation

Boil the potatoes in a large pot with plenty of water. Once it boils reduce the heat to low and cook the potatoes for 20 minutes or until done.
Remove the potatoes from the water and allow them to cool (approximately 20 minutes).
Cut the potatoes into cubes and place in a large bowl. Season with vinegar, salt and pepper and mix.
Add the other ingredients and mix the salad. Season once more with salt and pepper and refrigerate.

PRESENTATION

Before serving remove from the refrigerator and allow it to settle for 10-15 minutes. Serve in individual dishes and garnish with parsley and / or fresh basil.

TIPS

The salad can be prepared and refrigerated up to 8 hours before serving.

Comentario ¿Se hace màs light esta ensalada aceite de oliva? Asì me parece deliciosa, pero el ràbano puede resultar muy picante, especialmente para los niños, pero si se suprime, no pasa nada.
