Christmas Potato Salad

This potato salad recipe will be the ideal side dish for a main course with turkey or chicken. Additionally, it will be the perfect dish to bring to gatherings with friends, posadas, or Christmas dinners, as it is served cold and is very practical to prepare. If you don't have garlic powder, blend the dressing ingredients with a clove; it won't change the flavor and the consistency will be perfect.

  • 1 cup sour cream, for the dressing
  • 1/2 cups yogurt, natural for the dressing
  • 1/2 cups mayonnaise, for the dressing
  • 1 tablespoon mustard, for the dressing
  • 1/4 cups lime juice, for the dressing
  • 1 tablespoon garlic powder, for the dressing
  • salt, for the dressing
  • pepper, for the dressing
  • 2 cups potato, cooked and diced
  • 1/2 cups canned pineapple, in small cubes
  • 1/2 cups celery, finely chopped
  • 1/4 cups onion, finely chopped
  • 1/2 cups walnuts, chopped
  • bacon, fried and finely chopped, for garnish

  • For the dressing, in a bowl mix the sour cream with the yogurt, mayonnaise, mustard, lemon juice, and garlic powder; season with salt and pepper. Set aside.
  • Place the cooked potato, canned pineapple, celery, and onion in a bowl, pour in the dressing and mix; add the walnut, adjust the seasoning, and mix again.
  • Serve on a platter and garnish with fried bacon.
