Potato Salad with Hummus

Delicious mashed potato salad with Hummus Dressing. It’s very tasty and perfect for enjoying at home with a different dish. You have to try it.

  • 4 potatoes
  • 1 bell pepper
  • 1 cup olives
  • 1/2 cups shrimp, cooked, for decoration
  • 1 cup Libanius® chipotle and coriander hummus

  • In a large pot with water, add the potatoes and cook until they are soft. Once ready, remove and let cool.
  • Some potatoes, mash them and others just chop them into small cubes. Similarly, chop the bell pepper into strips and mix in a bowl along with all the potatoes and olives.
  • Add the Chipotle Hummus and mix all the ingredients together.
  • To give a better presentation, you can place your mixture in a gelatin mold, refrigerate for a few hours, and then unmold. Decorate with shrimp.
