In a large pot with water, add the potatoes and cook until they are soft. Once ready, remove and let cool.
Some potatoes, mash them and others just chop them into small cubes. Similarly, chop the bell pepper into strips and mix in a bowl along with all the potatoes and olives.
Add the Chipotle Hummus and mix all the ingredients together.
To give a better presentation, you can place your mixture in a gelatin mold, refrigerate for a few hours, and then unmold.
Decorate with shrimp.
