This salad is a typical French recipe but with a fusion twist using peaches. The goat cheese is browned in olive oil and placed on a bed of lettuce with peaches.
Take the goat cheese (make sure it is very cold) and slice it. It is recommended to cut it with dental floss as it is very difficult with a knife.
Dip each slice of goat cheese in the egg whites and then in the breadcrumbs and place on a plate, refrigerate for 15 minutes.
Heat the olive oil (the 4 tablespoons) in a large skillet over medium heat. Brown the slices of goat cheese for 1 minute on each side and drain on paper towels.
In a large bowl, mix the lemon juice, mustard, salt, and pepper. Once the dressing is well mixed, add the olive oil and mix again.
Add the lettuce, sliced peaches, and mix well with the dressing.
Serve on individual plates with a bed of lettuce, 2-3 slices of peach, and 2-3 slices of goat cheese.
