Salad with Goat Cheese and Peaches

This salad is a typical French recipe but with a fusion twist using peaches. The goat cheese is browned in olive oil and placed on a bed of lettuce with peaches.

  • 350 grams goat cheese
  • 1 cup breadcrumbs, for breading
  • 2 egg whites
  • 4 tablespoons olive oil, for frying
  • 4 cups mixed lettuce
  • 2 peaches
  • 1/4 cups olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lime juice
  • 1 teaspoon pepper
  • 1 teaspoon salt

  • In a deep bowl, lightly beat the egg whites.
  • Take the goat cheese (make sure it is very cold) and slice it. It is recommended to cut it with dental floss as it is very difficult with a knife.
  • Dip each slice of goat cheese in the egg whites and then in the breadcrumbs and place on a plate, refrigerate for 15 minutes.
  • Heat the olive oil (the 4 tablespoons) in a large skillet over medium heat. Brown the slices of goat cheese for 1 minute on each side and drain on paper towels.
  • In a large bowl, mix the lemon juice, mustard, salt, and pepper. Once the dressing is well mixed, add the olive oil and mix again.
  • Add the lettuce, sliced peaches, and mix well with the dressing.
  • Serve on individual plates with a bed of lettuce, 2-3 slices of peach, and 2-3 slices of goat cheese.
