Tangerine Salad with Sesame Shrimp

If you love the mix of sweet and sour flavors, this salad is for you. It is made with Eva® Tuscan Salad, a blend of lettuce with apple, blueberries, almonds, walnuts, and feta cheese, accompanied by a white wine vinaigrette, ready to eat. Enjoy it with grilled shrimp.

  • 2 cups shrimp, medium, shelled, with tail
  • 1 tablespoon ginger, grated
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/4 cups sesame oil
  • 1/2 cups mandarin orange juice, seedless
  • 1/4 cups soy sauce, reduced sodium
  • 2 tablespoons chives, finely chopped
  • ground black pepper
  • 1 bag Eva® tuscan salad
  • 1 cup fava beans, green
  • 1 cup tomato, in cubes
  • 1 cup mandarin orange wedges, canned, drained
  • 1 cup manila mango, peeled, diced medium
  • 1 avocado, sliced
  • toasted sesame seeds, to accompany

  • In a bowl, mix the shrimp with ginger, garlic powder, paprika, sesame oil, tangerine juice, soy sauce, and scallions; season with pepper and combine.
  • On a hot grill pan, cook the shrimp for 5 minutes until adequately golden. Reserve and keep warm.
  • In a bowl, pour the contents of the Eva® Tuscan Salad, add green beans, tomato, and pour the white wine vinaigrette included in the Tuscan salad, gently mix with a spoon.
  • Serve the salad in a bowl, placing the grilled shrimp in the center, add diced Manila mango and tangerine segments, accompany with avocado slices, and garnish with Eva® Tuscan Salad topping and toasted sesame seeds.
