Chayote salad

  • 2 chayotes, peeled
  • 3 carrots, peeled
  • 1/4 cups corn kernels, (yellow)
  • 1/2 cups cherry tomato, cut in halves
  • 1 cup mayonnaise, for the dressing
  • 1/2 cups sour cream, for the dressing
  • 1 teaspoon mustard, for the dressing
  • 1 tablespoon lime juice, for the dressing
  • 1 teaspoon garlic powder, for the dressing
  • 1 tablespoon chives, finely chopped
  • pinches salt, for the dressing
  • parsley, to garnish

  • In a pot with water, cook the chayotes until they are soft. Drain and reserve.
  • In a pot with water cooks, carrots until soft. Drain and reserve.
  • On a table and with grater, grate the chayotes. Set aside.
  • On a board, cut the carrots into cubes. Set aside.
  • In a bowl, mix mayonnaise, cream, mustard, garlic powder and scallion; Season with salt.
  • In a bowl mix the chayotes, the carrot, the corn kernels, the cherry tomato and add the dressing.
  • Serve on a platter and decorate with parsley leaves.
