Chayote Salad

  • 2 chayotes, peeled
  • 3 carrots, peeled
  • 1/4 cups corn kernels, (yellow)
  • 1/2 cups cherry tomato, cut in halves
  • 1 cup mayonnaise, for the dressing (or 1/4 cup for a lighter version)
  • 1/2 cups sour cream, for the dressing (or 1/4 cup for a lighter version)
  • 1 teaspoon mustard, for the dressing
  • 1 tablespoon lime juice, for the dressing
  • 1 teaspoon garlic powder, for the dressing
  • 1 tablespoon chives, finely chopped
  • pinches salt, for the dressing
  • parsley, for decoration

  • In a small pot with water, cook the chayotes until they are soft. Drain and set aside.
  • In a small pot with water, cook the carrots until they are soft. Drain and set aside.
  • On a board and with the help of a grater, grate the chayotes. Set aside.
  • On a cutting board, dice the carrots. Set aside.
  • In a bowl, mix the mayonnaise, cream, mustard, garlic powder, and scallions; season with salt.
  • In a bowl, mix the chayotes, carrots, corn kernels, cherry tomatoes, and add the dressing.
  • Serve on a platter and decorate with parsley leaves.
