Ingredients

4 servings
  • 2 pieces of chayote squash peeled
  • 3 pieces of carrot peeled
  • 1/4 of Cup of whole corn kernels (yellow)
  • 1/2 Cup of cherry tomato cut in halves
  • 1 Cup of Mayonnaise for the dressing
  • 1/2 Cup of sour cream for the dressing
  • 1 teaspoonful of mustard for the dressing
  • 1 tablespoon of lemon juice for the dressing
  • 1 teaspoonful of garlic powder for the dressing
  • 1 tablespoon of scallion finely chopped
  • enough of Salt for the dressing
  • enough of parsley to garnish

    Preparation

    In a pot with water, cook the chayotes until they are soft. Drain and reserve.
    In a pot with water cooks, carrots until soft. Drain and reserve.
    On a table and with grater, grate the chayotes. Set aside.
    On a board, cut the carrots into cubes. Set aside.
    In a bowl, mix mayonnaise, cream, mustard, garlic powder and scallion; Season with salt.
    In a bowl mix the chayotes, the carrot, the corn kernels, the cherry tomato and add the dressing.
    Serve on a platter and decorate with parsley leaves.

    PRESENTATION

    On a plate for salad and a refreshing drink.

    TIPS

    Do not overcook the chayote so you can grate without stressing it oo much. When you peel the chayotes use gloves, because due to the amount of starch, your hands may dry out.
