Easy Green Bean Salad

This healthy salad is prepared with vegetables like onion, cucumber, tomato, serrano chiles, and potatoes that are mixed with lime juice for a flavorful preparation everyone will love.

  • 4 potatoes, cut into medium-sized cubes
  • 1 teaspoon salt, for the potatoes
  • 1/2 cups red onion, sliced, for the salad
  • 1/2 cups cucumber, cut into small-sized cubes, for the salad
  • 2 cups green beans, cooked, for salad
  • 1 cup black beans, cooked, for salad
  • 1 cup tomato, fanned, for the salad
  • 2 serrano chiles, finely chopped, for the salad
  • 1/2 cups queso fresco, cut into small-sized cubes, for the salad
  • 1/4 cups lime juice, for the salad

  • In a small pot over medium heat, bring water to a boil. Add potatoes and salt. Cook for 8 minutes or until potatoes are soft. Drain. Set aside.
  • In a bowl, mix red onion, cucumber, green beans, potato, beans, tomato, serrano chile, cheese cubes, and lime juice. Season with salt and pepper. Add chopped cilantro. Mix until completely incorporated.
  • Serve easy green bean salad in a bowl.
