Easy Green Bean Salad

  • 4 potatoes, in medium cubes
  • 1 teaspoon salt, for the potatoes
  • 1/2 cups red onion, sliced, for the salad
  • 1/2 cups cucumber, in small cubes for the salad
  • 2 cups green beans, cooked, for the salad
  • 1 cup black beans, cooked, for the salad
  • 1 cup tomato, in fan shapes, for the salad
  • 2 serrano chiles, finely chopped, for the salad
  • 1/2 cups queso fresco, in small cubes, for the salad
  • 1/4 cups lime juice, for the salad

  • 1/2 cups fresh cilantro, finely chopped, for the salad

  • In a small pot over medium heat, boil water, add the potato and salt, and cook for 8 minutes or until the potato is soft enough. Drain and set aside.
  • In a bowl, mix the red onion with the cucumber, green beans, potato, beans, tomato, serrano chili, cheese cubes, and lime juice; season with salt and pepper, and add the chopped cilantro; mix until fully incorporated.
  • Serve in a deep plate. Enjoy!
