Spinach Salad with Strawberry and Avocado

  • 4 cups spinach, washed, disinfected, and dried
  • 1 1/2 cups strawberries, washed, disinfected, and dried. Cut in halves, half a cup for the vinaigrette
  • 2 avocados, cut into cubes
  • 1/4 red onions, finely chopped
  • 1/2 cups pine nuts, toasted
  • 1 tablespoon sugar, for the vinaigrette
  • 2 tablespoons water, for the vinaigrette
  • 1 cup olive oil, for the vinaigrette
  • 1/2 cups balsamic vinegar, for the vinaigrette
  • 1/2 teaspoons salt, for the vinaigrette
  • 2 pinches pepper, for the vinaigrette
  • 2 tablespoons black sesame seeds, for garnish

  • In a bowl, mix the salad ingredients. Set aside.
  • Blend half a cup of strawberries, sugar, water, olive oil, vinegar, salt, and pepper for 3 minutes until everything is well integrated. Adjust seasoning.
  • Serve the salad with the vinaigrette and garnish with black sesame seeds.
