Egg Sauce with Goat Cheese

  • 4 eggs
  • 2 tablespoons vegetable oil
  • 30 grams goat cheese
  • 2 serrano chiles
  • 2 tomatoes
  • 1 sprig epazote

  • In a frying pan or griddle, roast the chiles and tomatoes. Blend them and set aside. Cut the cheese into small cubes.
  • In a bowl, beat the eggs with a little salt.
  • In a frying pan, add the oil and then the beaten eggs. Once they are well cooked, add the sauce, followed by the cheese cubes and the sprig of epazote. Let it boil and serve.
