Preparation
In a frying pan or a comal roast chiles and tomatoes. Grind them and reserve. Cut the cheese into small cubes.
In a bowl beat the eggs with a little salt.
In a frying pan, add the oil and add the beaten eggs. Once they are fried, add the sauce, then the cheese cubes and the epazote sprig. Let it boil and serve.
