6 tomatoes, poached and cut into medium-sized cubes
1/2 teaspoons chile flakes

1 tablespoon fresh basil leaf, minced

In a bowl, mash potatoes with a potato masher until a purée is obtained. Set aside.
In a pot, heat olive oil and fry garlic. Add chile flakes and stir for 5 minutes.
Add tomato purée and cook for 1 hour until a thick paste is obtained. Add olive oil.
Season with salt and pepper. In a skillet, place pasta and pour in homemade arrabbiata sauce. Serve in a soup dish garnished with Parmesan cheese and basil.
