To prepare the arrabiata sauce, a basic tomato sauce is used, with the characteristic addition of red chili, which gives a subtle spicy and delicious touch to the sauce.

1/4 cups olive oil
1 cup onion, finely chopped
1 tablespoon garlic, finely chopped
6 tomatoes, poached and diced into medium cubes
1/2 teaspoons chile flakes
salt
pepper
1/4 cups olive oil
1 tablespoon fresh basil leaf, chopped
short pasta, boiled
Parmesan cheese, for garnish

In a bowl, using a potato masher, crush the tomatoes until forming a puree. Set aside.
In a pot, add the olive oil and fry the onion with the garlic; add the chili flakes and mix for 5 minutes.
Add the tomato and cook for 1 hour until you have a thick paste. Add olive oil.
Season with salt and pepper. In a skillet, mix the pasta with the sauce and serve in a deep plate, garnish with parmesan and basil.
