Green Sauce with Peanut

  • 1/2 cups olive oil
  • 1 cup Jalapeño chile
  • 1 cup serrano chile
  • 2 garlic
  • 1/2 cups olive oil
  • 1 cup unsalted peanuts
  • 1 cup cilantro
  • 1/4 cups white vinegar
  • salt
  • sunflower seeds
  • tostadas, for accompaniment

  • Pour the olive oil into a skillet, then cook the jalapeño chiles, serrano chile, and garlic for 10 minutes or until golden. Remove from the skillet and set aside.
  • Add olive oil to the same skillet and toast the peanuts for 5 minutes or until ready. Set aside.
  • Place the chiles, garlic, peanuts, cilantro, and white vinegar in a processor and season with salt. Grind for 10 minutes or until the green sauce with peanuts is well processed.
  • Serve the sauce in a clay dish and garnish with sunflower seeds. Accompany with tostadas and enjoy.
