Pickled Onions

Recipe for delicious pickled red onions to accompany cochinita pibil.

  • 500 grams red onion, julienne
  • 1/2 Habanero chiles
  • 2 tablespoons fresh cilantro, chopped
  • 6 tablespoons orange juice, sour
  • 4 tablespoons white vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon salt

  • Blanch the onion for 3 minutes in boiling salted water, drain, and let sit.
  • In a bowl, mix all the ingredients, cover, and let sit for at least 2 hours.
