500 grams red onion, julienne
1/2 Habanero chiles
2 tablespoons fresh cilantro, chopped
6 tablespoons orange juice, sour
4 tablespoons white vinegar
1 teaspoon dried oregano
1 teaspoon salt

Blanch the onion for 3 minutes in boiling salted water, drain, and let sit.
In a bowl, mix all the ingredients, cover, and let sit for at least 2 hours.
