Sweet Chili Sauce

It’s perfect for mixing with rice, salads, tempuras, for fish or meats. On the other hand, the ingredients used to prepare it are very easy to find separately. As its name suggests, it is a recipe of Thai origin.

  • 1/2 cups water
  • 120 milliliters rice vinegar
  • 45 milliliters fish sauce
  • 30 milliliters sherry
  • 3 cloves garlic, chopped
  • 1/2 teaspoons chile, ground
  • 1 1/2 tablespoons cornstarch
  • 1 teaspoon salt
  • 2/3 cups sugar, white

  • Place all the ingredients (except for the water and cornstarch mixture) in a pan and bring the mixture to a boil.
  • Reduce the heat and let it simmer for 10 minutes or until the mixture has reduced by half. (Keep in mind that the vinegar will darken. Generally, rice vinegar has a milder flavor than other vinegars.)
  • Reduce the heat to low and add the cornstarch-water mixture. Stir while adding it, and continue stirring until the sauce thickens (about 2 minutes).
  • Remove it from the heat and taste it. It should have a sweet flavor initially, followed by a sour taste, then a bit of spiciness, and salty notes. If the sauce is not sweet enough, add a little more sugar. And if it’s not spicy enough, add a little more chili.
  • Pour the sauce into a suitable container and serve it as a dip for chicken, fish, seafood, or as a dipping sauce for items like chicken wings, spring rolls, or shrimp. It is also an excellent sauce for marinating chicken for the barbecue, fish, or seafood.
