It is perfect to mix it with rice, with salads, tempura, for fish or meat. On the other hand, the ingredients used to prepare it are very easy to find separately. As its name suggests it is a recipe of Thai origin.

Ingredients

10 servings
  • 1/2 Cup of Water
  • 120 milliliters of rice vinegar
  • 45 milliliters of Fish sauce
  • 30 milliliters of sherry
  • 3 cloves of garlic chopped
  • 1/2 teaspoonful of Chili pepper ground
  • 1 1/2 spoonfuls of cornstarch
  • 1 teaspoonful of Salt
  • 2/3 of Cup of sugar white

    Preparation

    Place all the ingredients (except the mixture of water and cornstarch) in a pan and bring the mixture to a boil.
    Reduce the heat and let it simmer for 10 minutes or until the mixture has reduced by half. (Note that the vinegar will darken, usually the vinegar of rice has a less strong flavor than the rest of vinegars)
    Reduce the heat to a minimum and add the cornstarch-water mixture. Stir while you add it and continue stirring until the sauce thickens (plus or minus 2 min)
    Remove it from the fire and try it. It should have a sweet taste at the beginning, followed by a sour taste, then a little spicy and salty details. If the sauce is not sweet enough, add a little more sugar. And if it is not spicy enough, add a little more chili.
    Pour the sauce into a suitable container and serve it as an accompaniment to chicken, fish, seafood or as a sauce to say, such as chicken wings, spring rolls, prawns. It is also an excellent sauce to marinate chicken that will be barbecued, fish or seafood.
