Bring a large pot of salted water to a boil.
Put ice, water, and salt in a large Pyrex dish (this will be used to place the asparagus after they are cooked to prevent them from overcooking).
Place the asparagus in the boiling water and wait for it to boil again, leave for about 2 minutes. Remove from the water (they should be a bit firm but you should be able to pierce them with a fork easily) and place in the ice water in a Pyrex dish. Take them out of the water, dry, and set aside.
In a small bowl, mix the olive oil, vinegar, parmesan, and salt. Stir and add the asparagus to coat them.
Arrange the asparagus on each plate and serve with the hard-boiled egg on top, chopped.
