Asparagus with Egg in Parmesan Dressing

This asparagus dish is topped with a parmesan dressing and chopped hard-boiled egg. It is delicious as a starter for a dinner.

  • 1 package asparagus, with the tips cut off
  • 3 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons Parmesan cheese
  • salt
  • 1 egg, hard-boiled, the white separated from the yolk and chopped

  • Bring a large pot of salted water to a boil.
  • Put ice, water, and salt in a large Pyrex dish (this will be used to place the asparagus after they are cooked to prevent them from overcooking).
  • Place the asparagus in the boiling water and wait for it to boil again, leave for about 2 minutes. Remove from the water (they should be a bit firm but you should be able to pierce them with a fork easily) and place in the ice water in a Pyrex dish. Take them out of the water, dry, and set aside.
  • In a small bowl, mix the olive oil, vinegar, parmesan, and salt. Stir and add the asparagus to coat them.
  • Arrange the asparagus on each plate and serve with the hard-boiled egg on top, chopped.
