Red Beans

I share this simple snack of red beans that you can prepare with what we commonly have in the fridge: beans, chorizo, and a bit of cheese. It’s one of my favorites; I hope you enjoy it.

  • 1/2 kilos beans, Peruvian
  • 300 grams chorizo, with pork
  • 100 grams queso fresco
  • 2 tablespoons vegetable oil
  • 350 grams tortilla chips
  • 2 1/2 liters water
  • salt

  • Cook the beans in enough water, and once they are cooked, add salt (they should not be too salty as the chorizo will add a bit more salt). Once cooked, blend with just a ladle of the bean juice, as they should be thick.
  • In a pan over medium heat, place approximately 250 ml of water and add the chorizo, stirring constantly.
  • Once the water from the chorizo has evaporated, transfer it to the pot where it will be cooked and served, and add the two tablespoons of oil, stirring constantly again until the chorizo is fried (it should not turn golden, just take on a bit of color).
  • Once the chorizo has released some fat, it’s time to add the beans, stir to combine, and keep stirring until it comes to a boil, as the beans are thick and if you stop stirring, they will burn.
  • Once it starts to boil, turn off the heat, sprinkle the cheese over the beans, and cover with a lid so that the cheese melts a little.
  • Ready, serve with tortilla chips.
