Grilled Potatoes with Goat Cheese

These delicious potatoes are boiled, sliced, and grilled with goat cheese and mint leaves.

  • 6 potatoes
  • 200 grams goat cheese
  • 12 leaves peppermint
  • 2 tablespoons olive oil
  • pepper, to taste

  • Bring a large pot of salted water to a boil. Add the potatoes and cook until they are slightly soft.
  • Remove the potatoes from the water and let them cool for 20-25 minutes. With a sharp knife, cut the potatoes into thick slices.
  • Make towers with a thick slice of potato, a slice of goat cheese, a mint leaf, another potato, another slice of goat cheese, and finally another potato. Season with olive oil, salt, and pepper.
  • Place the towers on the grill (preferably with charcoal) and cook for 15 minutes or until the cheese is slightly melted. Remove from the heat and serve.
