Bring a large pot of salted water to a boil. Add the potatoes and cook until they are slightly soft.
Remove the potatoes from the water and let them cool for 20-25 minutes. With a sharp knife, cut the potatoes into thick slices.
Make towers with a thick slice of potato, a slice of goat cheese, a mint leaf, another potato, another slice of goat cheese, and finally another potato. Season with olive oil, salt, and pepper.
Place the towers on the grill (preferably with charcoal) and cook for 15 minutes or until the cheese is slightly melted. Remove from the heat and serve.
