Oven-Baked Potatoes with Bacon

Prepare these delicious oven-baked potatoes with bacon and a manchego cheese sauce that will be the sensation of the place. They are simple and delicious, and the Santa Clara milk and cream give them a creamy texture and lots of flavor. Perfect to accompany a main dish or to eat on their own.

  • 1 tablespoon butter
  • 1/2 cups bacon, chopped
  • 1 cup Santa Clara® whole milk
  • 1/4 cups butter
  • 1/4 cups Santa Clara® sour cream
  • 1/3 cups Manchego cheese, grated
  • salt and pepper

  • Preheat the oven to 180 °C.
  • Poke the potatoes with a wooden stick, cook in boiling water with butter and salt for 30 minutes. Cool.
  • Make cuts in the potatoes without cutting through completely and brush with butter. Add salt, pepper, and fill with bacon.
  • Wrap in aluminum foil, bake for 10 minutes.
  • For the sauce, heat Santa Clara milk with butter. Add cream and cheese, and cook for 5 minutes or until the cheese melts. Season.
  • Serve the potatoes with the sauce and garnish with Chinese parsley.
