75 grams cincho cheese
50 grams butter
2 eggs
cow's milk
1 1/2 cups breadcrumbs
2 cups vegetable oil, for frying

Cook the potatoes until they are soft.
Prepare a purée with them.
Add a little milk.
Add the finely grated cheese. Shape the pear-like dumplings with the purée, dip them in beaten egg and then in breadcrumbs.
Fry in plenty of oil and garnish with lemon leaves.
