Potato Gratin with Poblano Strips and Bacon

Prepare this delicious potato side dish that breaks all the molds. It has a spicy touch from poblano strips, plus crispy chopped bacon and a hint of Oaxaca cheese. The best thing you will ever taste!

  • 5 potatoes, peeled and sliced
  • 1 teaspoon salt
  • 5 slices bacon, finely chopped
  • 1/4 onions, finely chopped
  • 1 cup Poblano chile strips
  • 1/2 cups sour cream
  • 1 cup Oaxaca cheese, shredded
  • 1 pinch salt, optional
  • 5 grams chervil, for garnish

  • Preheat the oven to 180°C.
  • In a pot with boiling water, cook the potatoes with salt until they are soft on the outside and firm on the inside.
  • In a medium skillet, fry the bacon until golden brown. Add the onion and cook until translucent.
  • Add the poblano strips and cook for a few more minutes. Set aside.
  • In a greased baking dish, place a layer of potatoes, some cream, and the poblano strip preparation. Repeat until the dish is full and finish with cheese.
  • Bake for 10 to 15 minutes or until the cheese has melted and the potatoes are fully cooked. Garnish with parsley and serve.
