1 cup sour cream
1 cup Manchego cheese

Wash and peel the potatoes and slice them.
Chop the onions and fry them in 2 tablespoons of butter.
In a pyrex with butter on the bottom, arrange the first layer of potatoes.
Melt the remaining butter and mix it with the cream.
Sprinkle the potatoes with salt and pepper and add 1/3 of the cream mixture.
Place half of the onions on top and add some cheese.
Arrange the second layer of potatoes and sprinkle them with salt, paprika, and nutmeg.
Cover them with one-third of the cream mixture and add the rest of the onions.
Put cheese on top and finish with the potatoes sprinkled with salt and pepper, the rest of the cream, and cheese.
Cover with aluminum foil and cook in the oven at 350 degrees Celsius for 45 minutes or until the potatoes are soft.
Remove the foil and let them brown for 5 minutes on top.
