1 cup onion, finely chopped
Extra Virgin Olive Oil Unico de Goya®
1/4 cups garlic, finely chopped
2 cups tomato, finely chopped
1 cup tomato purée
4 cups potato
1/2 cups parsley, finely chopped
1 cup Goya® Alcaparrado
salt

1/4 cups güero chile, for garnish

Peel the potatoes and slice them. Set aside.
In a cast iron skillet, add olive oil, the potatoes, salt, and pepper, roast for 10 minutes at 180°.
In a pot, heat Extra Virgin Olive Oil Unico Goya®, onion, garlic, tomato, tomato puree, seasoning with salt and pepper. Cook for 5 minutes.
Add the sauce to the skillet, the Goya® Capers, and the parsley.
Serve with yellow chiles, a delicious loin, and your favorite drink.
