Potatoes with Olives and Peppers

  • 1 cup onion, finely chopped
  • Extra Virgin Olive Oil Unico de Goya®
  • 1/4 cups garlic, finely chopped
  • 2 cups tomato, finely chopped
  • 1 cup tomato purée
  • 4 cups potato
  • 1/2 cups parsley, finely chopped
  • 1 cup Goya® Alcaparrado
  • salt
  • pepper
  • 1/4 cups güero chile, for garnish

  • Peel the potatoes and slice them. Set aside.
  • In a cast iron skillet, add olive oil, the potatoes, salt, and pepper, roast for 10 minutes at 180°.
  • In a pot, heat Extra Virgin Olive Oil Unico Goya®, onion, garlic, tomato, tomato puree, seasoning with salt and pepper. Cook for 5 minutes.
  • Add the sauce to the skillet, the Goya® Capers, and the parsley.
  • Serve with yellow chiles, a delicious loin, and your favorite drink.
