Oven-Baked Potatoes with Thyme

700 grams potato
3 tablespoons olive oil
coarse salt
pepper, to taste
2 tablespoons fresh thyme, chopped

Preheat the oven to 220 degrees Celsius.
Grease two baking sheets with olive oil.
Peel the potatoes and cut them into sticks.
Cook the potatoes in boiling water until they are half-cooked, about 5 minutes.
Remove from the water and dry well with paper towels.
Place the potatoes on the baking sheets with a little more olive oil, salt, and pepper, and bake for 25 minutes, turning them every 10 minutes.
