Potato Cake with Cheese and Ham

  • 8 potatoes
  • 2 tablespoons olive oil
  • 2 eggs
  • 1 cup whipping cream
  • 1/2 cups cow's milk
  • 1 teaspoon nutmeg
  • 20 slices deli ham
  • 2 cups Manchego cheese, grated
  • salt and pepper
  • parsley, chopped, for garnish

  • Preheat the oven to 180° C.
  • Using a knife, cut the potatoes into slices 5mm thick. Set aside.
  • Place the potatoes on a baking sheet, season with salt and pepper, and drizzle with olive oil, bake for 10 minutes, flipping occasionally.
  • Beat the egg with the cream and milk, season with nutmeg, salt, and pepper. Set aside.
  • Place a layer of potatoes at the bottom and edges of a previously greased cake pan, layer with slices of ham, manchego cheese, and repeat the process until the mold is full, finishing with cheese.
  • Pour the egg mixture and place a final layer of potatoes. Bake for about 40 minutes. Remove from the mold and bake for an additional 10 minutes to brown the potatoes.
  • Cut a slice and serve with chopped parsley.
