Preheat the oven to 180° C. Using a knife, cut the potatoes into slices 5mm thick. Set aside. Place the potatoes on a baking sheet, season with salt and pepper, and drizzle with olive oil, bake for 10 minutes, flipping occasionally. Beat the egg with the cream and milk, season with nutmeg, salt, and pepper. Set aside. Place a layer of potatoes at the bottom and edges of a previously greased cake pan, layer with slices of ham, manchego cheese, and repeat the process until the mold is full, finishing with cheese. Pour the egg mixture and place a final layer of potatoes. Bake for about 40 minutes. Remove from the mold and bake for an additional 10 minutes to brown the potatoes. Cut a slice and serve with chopped parsley.
