Roasted Cambray Potatoes with Rosemary

  • 2 1/2 cups new potatoes
  • 1/2 cups olive oil
  • 1 clove garlic, thinly sliced
  • 1 tablespoon fresh rosemary
  • 1 red bell pepper, finely chopped

  • Boil the cambray potatoes in salted water and let them cook, but do not let them fall apart.
  • Remove them from the water and when they cool down a bit, cut them in half.
  • Heat the oil and add the cambray potatoes, seasoning with salt and pepper to taste, and cook until golden.
  • Incorporate the garlic and rosemary, then add the bell pepper until it browns a bit.
  • Remove from heat and serve hot.
